Potato Kugel- Manis Family

8 medium potatoes

2 celery stalks

2 carrots

1 large onion, divided in half

¼ cup melted margarine (cotton seed or peanut oil for Passover)

Corn oil (cottonseed or peanut oil for Passover)

4 eggs

1 can creamed corn (exclude if making for Passover)

6 Tbs matzo meal (+more)

1 ½ tsp baking powder (exclude if making for Passover)

2 tsp salt

¼ tsp pepper

Preheat oven to 375

Slice and sauté ½ the onion in margarine until tender

Grind potatoes, celery, carrot, raw and sautéed onion in grinder or food processor

Drain excess liquid

Pour enough oil in to a 9×13 baking pan to generously cover the bottom, put in oven to warm

Stir in eggs, corn, matzo meal, baking powder, salt and pepper

Add more matzo meal if the mixture is too wet

Spoon into oiled baking dish, there may be too much for one pan, do not overfill, if needed put excess in additional pan.

Bake for 45 minutes or until brown
