Passover Brookie Bar

Brownie Layer

¼ C hot water 

6 Tbsp Dutch processed cocoa

2 eggs

1 C sugar

½ tsp salt

¼ C oil

¼ C matzo cake meal

½ C chocolate chips

Add the hot water to the cocoa.  Stir with whisk and let cool.

In another  bowl, beat eggs, sugar, salt and oil. Mix in the cooled cocoa.

Stir in the matzo cake meal until just combined.

Fold in chocolate chips.

Pour into an 8-inch square pan lined and greased with parchment paper.

Chocolate Chip Cookie Layer

½ C unsalted butter, softened

½ C brown sugar

¼ C sugar

1 egg

1 tsp orange juice

½ tsp salt

¾ C matzo cake meal

1Tbsp potato starch

½ tsp baking soda

1 C chocolate chips

Cream the butter and sugars for about two minutes until creamy. 

Mix in the egg, orange juice, and salt.

Then add the cake meal, potato starch, and baking soda.

Mix well, but be careful not to overmix, and fold in the chocolate chips.

Dollop spoonfuls of the cookie dough evenly on top of the brownie layer without pressing too hard. 

Bake in a preheated 350 degree oven for about 25 – 30 minutes or until a toothpick comes out with a few crumbs. Check in 15 minutes. If it’s starting to brown, loosely tent with foil. Let it rest about 10 minutes before removing from the pan and then cool at least an hour.  Cut into 16 bars.
