Matzah Brie with Salami
from Moira Carin

2 eggs
Salt and pepper, to taste
2 pieces of matzah
Onions, sliced
4 slices of salami, cut in small pieces
1 tablespoon vegetable oil

Crack eggs in a bowl and whisk. Add salt and pepper to taste.
In a fry pan warm vegetable oil, sauté onions until transluscent.
Add salami and sauté for a minute or two.
Add matzah and egg mixture.
Fry until eggs are cooked.
Transfer to a plate and enjoy!
