Passover Popovers (Mama Carin’s)

1 cup water
½ cup vegetable oil
1/8 teaspoon salt
1 cup matzah meal
4 large eggs
Bring water, oil and salt to a boil.
Turn off heat. Add matzah meal and mix until dough does not stick to pan.
Add eggs, one at time, mixing thoroughly as you add each egg.
Spoon dough onto a muffin pan. Fill each well halfway.
Bake at 400 degrees for 35 minutes or until golden brown.
*You can also use a mini muffin pan. Bake at 350 for 25 minutes or until golden brown.
